I remember when Hamburger restaurants sold hamburgers and nothing else. Then they diversified and you can now buy a latte, breakfast and cakes at my local MacDonald’s in Perth. But, the latest trend is back to specialisation and it will be interesting to see how this develops. In Manhattan in New York the home of thousands of pizza shops there is the Artichoke Pizza shop. A restaurant that just specialises in one type of pizza. This is not unique. One Dish eateries are coming into fashion. In Oakland, California you can visit Homeroom which serves macaroni and cheese, nothing else, except they provide it in a number of different ways. At Studio City in California there is Baked Potato, in Dallas Cereality only serves breakfast cereals and in Washington DC Meatballs only serves meatballs. Is this a new trend? Time will tell, but being famous for something is what retailing is all about if you do not want to get in the price trap.
